My first thanksgiving with #celiacdisease was really tasty! Turkey, roasted Brussels sprouts and delicata squash, broccoli salad (#nolettucenoproblem), onion potatoes, cranberry sauce, and a #glutenfree baguette! Plus prosciutto wrapped squash as an appetizer 👌 And for dessert: whipped cream with a little pumpkin pie 😉 Hope you all enjoyed the day with family and friends and some good food! I’m getting better at this whole gluten free thing but some days it still brings up a lot of anxiety when buying things and worrying about cross contamination. Happy Halloween!!! I gave a talk this AM to our rugby team in my awesome costume 🍓 I’m not sure if it was a better way to hold their attention or worse 😂 I’m thinking better! We talked about hydration- do you know how much water you need in a day? Aim for about half your body weight in ounces as a rough estimate but ask an RD for more specific recommendations if you’re an athlete or are exercising a lot! Not a fan of plain water? Try some fancy spa water- slice a couple strawberries and add them to your water bottle for a hint of flavor 🍓 #sportsRD #dietitianapproved #sportsnutrition

Ever since I was diagnosed with #celiacdisease in March, I’ve been trying to experiment a little more with starch options at meals. I had to say goodbye to a few of my favs (wheat berries, farro, and barley- I will miss you guys 😘) but I got to say hello to getting creative and tried cooking plantains at home! Inspiration for this meal came from a facebook ad for a restaurant in Miami that serves plantains as hamburger buns- yum!! My dish was pretty darn good but I’ll need to find that restaurant if (when) I go back to Miami! 😄 Also, can we just take a moment to be grateful for peach season? #intuitiveeating #mindfuleating #enjoyyourfood #avocadorose

It’s smoothie season!! Anyone else regularly make a smoothie as a quick “little” snack and end up making like 40 oz of smoothie?? It’s a rare day that I eyeball my measurements right 😂 But yes, they keep in the fridge! #leftovers This one is coconut, raspberry, banana, and blueberry 😍 I’m not alway a fan of raspberry smoothies but this one was pretty good What are your favorite smoothie ingredients? #smoothies #enjoyyourfood #intuitiveeating
It’s good to be home! I’m back from living in Indy for two months for a sports nutrition fellowship at @definingsports (made possible by @therightstuff_usa - thank you!!) plus a grand total of 3 weeks of driving through 14 states and rock climbing in 7! Now I’ll be home for 4 weeks before starting grad school and a sports dietitian graduate assistantship at CWU. Bring on the #sportsnutrition! #sportsRD #enjoyyourfood #intuitiveeating
